Say Cheese!!! It's Friday!!! I don't usually post on a Friday, but it sure has been a hectic week! Fret not, as this weekends fitness challenge is a Total Body HIIT workout!! You have 10 core exercises, with no breaks in between, so click on the video below and see how many rounds you can do. As you can see from my picture, I certainly got my sweat on (I'd love you to tag me in some of your sweaty pics on my Instgram after you have completed this weeks challenge). Oh for those of you who do not have a chance to watch the video, you can always download a copy of the poster which lists all the moves. You can even challenge yourself by recording how many reps of each move you can do. His event next week is an attempt to set a new Guinness World Record for the largest HIIT session (the current record is a 3,687). Summer is OFFICIALLY in full swing and you know what that means right?....More BBQ's!! Well, this weeks recipe is inspired by one of my sisters!! She had one of those EPIC rice fail moments. You know, when you boil a pot of rice and because you have added too much water, it comes out all mushy! Fret not waste not, as with a little help of a few veggies and spices, you've got yourself some tasty rice burgers that are a worthy offering at any BBQ!! Rice Burgers (Vegan & Gluten Free) Makes 12 Burgers (Per serving 120kcals, 15.3g carbs, 3.8g protein, 4.2g fat, 0.3g salt) Ingredients: 480g Cooked Basmati Rice 320g Green Peas (boiled) 150g Red Onion (finely chopped) 116g Tofu Chunks (pre-cooked) 9g Minced Garlic (add more if you like!!) x2 TBSP of Jerk BBQ sauce x3 TBSP of Rapeseed Oil x1 TBSP of Black Pepper 1/2 tsp of Salt x1 TBSP of Mixed Herbs Method -In a bowl, simply mix all the ingredients above (apart from the oil) -Form 12 burgers out of the mixture -Add the oil into a pan and lightly fry the burgers in batches over a medium heat for 5-10mins (make sure you flip the burgers halfway during the cooking time) -Transfer to the oven and bake for a further 10mins maximum. And that really is all it takes!! You can serve them inside burger buns, or just eat them on their own with a side salad and spicy dip of course!! Feel free to modify your choice of spices and you can even toss in some beans or other veggies you might like. In my house, the kids are a fan of Jerk BBQ sauce!! The great thing about these burgers are they are half the amount of calories in a typical veggie burger AND do not require wheat flour to bind the burgers together, so they are 100% gluten free!! **THIS WEEKS FITNESS CHALLENGE** It's time to focus on toning those legs!! Whether is a quick smoothie blend using my Nutri Ninja or a hearty full English breakfast (all vegan of course!), I am definitely here for it! So this week I will be sharing my super easy Hash Brown recipe. I used to buy the ready made/frozen version, but actually, the homemade version is so much nicer and only requires simply ingredients that you already have in your cupboard, so let's get started! Homemade Hash Browns Serves 2 (Vegan & Gluten Free) (Per Serving: 56kcals -5.7g Carbs, 0.8g Protein, 3.3g fat, 0.5g Salt) Ingredients 1 Medium potato (grated) 1/2 an Onion (grated) 1 tsp Black Pepper A pinch of Salt 2tsps Mixed Herbs 1 TBSP Rapeseed Oil Method 1. Grate the potato and onion in a bowl and squeeze all the water out 2. Now stir in your herbs and spice and form mixture into 4 hash brown patties 3. Add the rapeseed oil to a pan on a low heat along with your hash browns and cook for 5-10mins on each side. 4. Drain off any excess oil and serve with your favourite breakfast accompanying sides such as baked beans, grilled mushrooms and tomatoes (my favourite!!!) Feel free to experiment with the spices you put in your hash browns. You can be adventurous and add in some chopped mushrooms or chopped bell peppers into the mix!! **THIS WEEKS FITNESS CHALLENGE** This week I have just 5 simple moves to work your upper body. Click on the picture to the left and you can download a copy of the poster if you want to print it off and remind yourself of the moves. N.B It's only 5 minutes, so that means we can sandwich this with other forms of physical activity that we might be doing throughout the day or see how many rounds of this routine can you do today!
