Try Me On A Thursday

Miss Carol’s Inspired Guilt Free Cookies (Gluten Free, Processed Sugar Free, Fat Free and Vegan!!)
 
Today’s Try Me on a Thursday treat is inspired by one of the chefs at my daughters old school (shout out to Miss Carol!!).  Miss Carol made the BEST oatmeal and raisin cookies which were ADORED by parents and students alike!! However, I have made a few substitutions to make a guilt free version!!
 
Ingredients
2 Ripe Bananas
2 Cups of Oats
1tsp Cacao Powder
1tsp Cinammon
                                       1 handful of raisins
 
     Method
  1. Simply mash the bananas in a bowl with a fork
  2. Stir in the oats, cinnamon and raisins
  3. Form into small balls (I managed to get 10 out of this) on a greased baking tray and flatten out with a fork.
  4. Bake in the oven for 10-15mins on a medium heat
 
I have to say, these cookies are absolutely moreish considering its full of all things good for us!  They are the perfect post workout snack or something to sink your teeth into along with that afternoon cup of tea!!  If you don’t like raisins, you can sub with dates, cherries, nuts etc etc!!

Try Me On A Thursday

A few weeks ago I was complaining to one of my vegan friends that I am bored of eating anything with rice, pasta (gluten free) or potatoes!!  So she suggested that I experiment with Cauliflower Rice!!  Now the thought of cauliflower immediately took me back to being a child and I just could NOT stand them smell of them!!

 

Well, fast forward to today, cauliflower rice has been a lifesaver, especially when you are trying to have a low/no carb dinner!!

 

Cauliflower Rice with mixed vegetables (Raw Vegan & Gluten Free!!)

Ingredients
(you can make as much or as little as you like, hence no exact measurements!!)


Cauliflower florets

Spring Onion (just the green part, not the bulb)

Diced carrots

Diced cucumber

Black Pepper

Mixed Herbs

Fresh lemon juice

Chopped cherry tomatoes

Chopped Avocado

A pinch of salt (optional)

A small drizzle of olive oil

 

Method

-Take a couple handfuls of cauliflower florets and put them in a food process (or Nutri Ninja like I did).

-Gently pulse until you have small rice like grains

-Transfer into a bowl and mix together with all the other diced vegetables, lemon juice and herbs.

 
This is SUPER simple to make and you can add modify the choice of vegetables and condiments to your liking.  I tend to have this alongside one of my vegan curries –YUM!!!

What have you given up/taking up during Lent?

I am sure on your commute to work/school you would have heard a lot of discussion about people have given up for lent!  From giving up social media, watching soap operas or taking more time for daily reflections - the list goes on!!

​I love this time of year as it marks my 4th year vegan anniversary!!  I remember deciding to follow a vegan lifestyle for 40 days and never looked back!!  If you haven't quite made up your mind about what to give up/take up, then why not check out the 40 Day Vegan series. Even if you want to try being vegan for one meal at a time, I have put together a wealth of tips, tricks and motivation to see you through.

Whatever you decide to do, make it something that challenges and changes you!
