It sure has been a while! But I have been busy doing lots of research and getting some V-inspiration!
I had a great evening out with the girls yesterday. We decided to dine at a Ghanaian restaurant (Abokobi) and I was pleased to note their vegan offering of Red Red (aka Spicy Beans in a tomato sauce and Plantain)!! As you can see from the pic, we had a HUGE serving (N.B the coke can was NOT mine!!) but its contents were the inspiration for today's blog!

Well these protein rich bad boys are a great source of fibre, which is great for regulating our digestive system. Also if you are feeling sluggish or in need of an energy boost, B.E.P's are full of that iron rich content that your body needs for efficient functioning! The spicy tomato sauce was rich in antioxidants too, which is great for keeping the skin healthy and lowering the risk of various diseases!!)
I love me some plantain! It is a great source of potassium which does wonders for keeping your TRIPLE B's in check - aka blood sugar, blood pressure and brain function (its also great for bone health and preventing muscle cramps too!!!).
