Soup of the Week!!

With the cold weather settling in, a sandwich or wrap at lunchtime just won't do!  For me, soups are like a hot water bottle in a cup, but tasty too! Forget the tinned or the posh looking ones in the carton, i'm talking about home made goodness.  

Now this weeks soup is inspired by my mum.  My mum knows that I'm a BIG fan of plantain, however the other day, she popped by and left me with a big bag of them!!  Now there is only so much roasted/steamed/lightly fried plantain you can have.  So I thought, why not mix things up and have it in a soup! Yes I said - soup!!   I remember telling a few people about plantain soup and they looked at me like I was mad (LOL), but trust me, when you mix them up with a few simple ingredients, it actually tastes great!!

Plantain Soup (Vegan & Gluten Free!!!)

Ingredients

1 Plantain (diced)
1 Courgette (diced)
1/4 red bell pepper (diced)
1 spring onion
2 cloves of garlic
1/2 a small can of coconut milk
A few pumps of low calorie spray oil
paprika (as much as you like)
black pepper (as much as you like)
A few sprigs of fresh thyme 
1 veg stock cube (I used the Kallo yeast free veg stock)
400ml water

Method

-In a heated pan on a low/medium heat, add a few pumps of the low calorie spray oil to lightly glaze your pan and toss in all ingredients
-Give it a good mix and then add in the water, spices and coconut milk
-Mix again and cover for 20mins and that is your soup ready!!

Want more of a smooth texture? Simply transfer your soup mix into a blender and lightly pulse until you reach your desired texture.


The verdict?

Depending on the ripeness of your plantain, it has a sweet but savoury taste and complements the other ingredients.  If you want to give this soup a bit more body, you can add some chopped tomatoes and throw in some lentils or beans of your choice.  That will definitely hold you for the next couple of hours!!

Plantains not only taste great, but a packed with immunity boosting vitamins A & C.  Also, they are a good source of potassium, which helps in the regulation of sodium levels and thus have a positive impact on blood pressure!!
