Sweet and Sour Chunky Pasta!! (Serves 8)
In a heated pan, add the following ingredients (for the sweet and sour) and simmer on a low heat for 20mins.....
1 can Chopped Tomato
1 can Sweetcorn
1 onion (diced)
1/2 Pineapple Chunks (add the juice too)
1/2 cup Broccoli
2 Carrot (thinly sliced)
1 cup of chunky mixed peppers (chopped)
1 Garlic Clove (grated)
25g Ginger (grated)
1 tablespoon Soy Sauce
1 tablespoon All Purpose seasoning
1/2 tablespoon Black Pepper
In a separate pot, add the following ingredients in a pan for 12-15mins
600ml Boiling Water
500g Wholemeal Pasta Shells (Switch to Gluten Free if necessary)
1 Vegetable Stock Cube
-Drain the cooked pasta and add to the Sweet and Sour sauce mix. Stir to ensure all the ingredients are fully blended together.
-Transfer to an ovenproof dish and bake in the oven for a further 15-20mins. You can add some grated vegan cheese on top .
