Day 10 Saturday Night Vegan!
It’s the weekend again and how are your abs feeling after trying the One Track Plank workout? Last week we learnt about YOLO meals and todays recipe is for a Spicy Beanburger with a side of Swede Wedges!! It is sooo easy to make and you can whip up a batch and freeze it up for late
For the bean burger
1 can of butter beans
1 Onion (finely chopped)
1 clove of garlic (minced or use garlic powder)
2 tablespoons of BBQ or jerk seasoning
1 tsp of Thyme
2 tablespoons of dry oats
2 tablespoons of plain wholewheat flour (use GF option if you have it)
Simply mash all the ingredients together to form your bean patty and put in the oven for 20-25mins on a medium heat. Once ready, serve in a bun with a garnish of green salad.
For the wedges...
1 Swede (peeled and chopped into wedge slices)
1 tablespoon of rapeseed or olive oil
Coat the wedges in the oil and place on a baking tray in the oven for at least 30mins (again a medium heat should be fine)
